ALBERTO BATTAGLINI

Mixologist and Bar Manager

 

Another native of Verona and school chum of Luca’s, Alberto Battaglini dreamed of a restaurant career when he was still in elementary school.  Attending Scuola Alberghiera he learned the fundamentals of cooking and food service.  He quickly learned that being a chef was not for him.  From there he started an ardent love affair with spirits which took him to Gatwick, London where he met his mentor in mixology, Ian Slater.  Alberto further honed his mixology passion and skills in Spain and Mexico before meeting up with his old school friend, Luca, at Bar Toscana in Los Angeles.

 

Alberto is now the resident Mixologist at S. Y. Kitchen where he creates his own infusions of spirits and bitters from a local bounty of fruits, vegetables and herbs.  He says, “The soul of mixology is found in all the old recipes that we twist with modern ingredients and tools, in order to play with tastes to give every customer an extraordinary experience.’

P.Bingo Wathen

Wine Director

 

Patrick Bingo Barieau Wathen is a true child of the vine. Son to prominent winemaker Bill Wathen of Foxen Vineyards in the Santa Ynez Valley, he’s spent most of his life in the vineyards. His father named him after Tom Robbin’s beloved character “Bingo Pajama” and Bingo stuck through adulthood.

 

Bingo attended the University of Santa Barbara where he received a Global Studies Degree specializing in the Spanish language. After college, he traveled abroad spending several years in Spain studying and teaching English. Drawn by the pull of winemaking, he next found a job interning at Olivier Merlin, a small but well- known vineyard in Burgundy, France.  When he returned to California’s Central Coast, he worked at Foxen learning the ropes while studying viticulture classes at the local community college. Wine came naturally to him; he had developed his palate for wine from a young age and soon passed the first level certification at the Court of Sommelier. He has recently achieved certification for level II as a Certified Sommelier.
